It took me a long time to find a vanilla cake recipe that lived up to my expectations. It was tricky to find a cake with good flavor and the texture that I wanted. But I found this perfect recipe in the Food Network Magazine "Amazing Cupcakes" issue (with a title like that, how could it not live up to expectations!). The cake is so fluffy and moist and has so much delicious vanilla flavor. These cupcakes are perfect for birthday celebrations or for just about any reason to make dessert. My search is over and I'm never turning back!
Vanilla frosting is also amazing. The best thing about it is how many fun tweaks you can make. You can make just about any color of frosting that your heart desires. You can add any type of decoration (after all, white doesn't clash with anything!). And flavor-wise I think vanilla gets such a bad rap. It is a flavor in itself and it's delicious! And just like its color, the flavor of vanilla frosting can be paired with many different kinds of cakes.
Make one big batch of vanilla frosting and then divide it up into separate bowls. Add different colors of food coloring gel to each bowl to make a colorful cupcake display!
