A couple of weeks ago there was a wine festival near my apartment. People tease me for living in the suburbs, but sometimes there are perks! This day was definitely one of them. Horse racing and wine tasting...people dressed up derby-style and locals in jeans and t-shirts...food trucks and farm stands with local cheeses. Loved it all! And best of all, it was a great excuse to make these sangria cupcakes again.
I made these once last year for a dinner party and they were a big hit. I found the recipe on The First Year blog and only made a small change to the frosting recipe. I've just been waiting for a good excuse to make them again. The cupcakes have the fruit and the frosting has the wine. And just like a good sangria, they're not too sweet or fruity, but have just the right balance of wine and fruit. Now I just need another reason to make them again... Wineries trip soon anybody??
After making these cupcakes, I had lots of the wine reduction left over. I decided to create a new dish with the leftovers. Check out my Wine and Blackberry Chicken recipe to see what I made. Aren't leftovers the best?!
