If you're anything like me, then you may have gone a little overboard stocking up on pumpkin and cranberries this fall. I wish that these ingredients were acceptable to bake with year round, but I guess their seasonality is what makes them so special. And this bread is a delicious way to use them up at the end of their season! I've made this pumpkin bread many times but this is the first time I've added cranberries. My Kids and plan to have a Gingerbread theme this Christmas season. We will be making Gingerbread cookies and a Gingerbread house. They're excited to help me make everything, and I'm glad that we have this activity so that we can bond better as a family. I have been searching online for another dessert that will go well with our theme, and I saw your Pumpkin Cranberry Bread recipe. I will be adding cream cheese frosting and walnuts on top to make it more festive and appropriate for Christmas.
